In my opinion, a 180 gr bullet is way too heavy for a 357 Mag. The 357 Mag optimizes with a 158 gr bullet ... best accuracy and energy. The 180s will have better momentum but that's where the "pros" end and the "cons" start. For deer, I would select a good quality 158 gr jacketed hollow point such as a Hornady XTP and load it up to 1300 fps (17 gr of W-296 and a CCI 550 Mag primer).
The 357 Max works really well with a 180 gr bullet but then it has a longer case and is loaded with more powder and can operate with more chamber pressure (35k for a 357 Mag ... 45k for a 357 Max).
