It's funny to me when somebody has their first post on this forum and it has almost zero to do with intro and includes several gun/ammo/acc. related questions most everyone ignores the actual questions and just says "welcome". I guess the welcome is nice but you asked several questions and seem to be searching for answers. Unfortunately, I'm an AR guy so I cant address the mini questions directly. There seems to be a ton of mini owners on here so hopefully they'll chime in with actual information.
As far as ammo though I can say buy whatever cheap 55gr .223 or 5.56 you can find and play with it. If you're looking for great consistent MOA or sub MOA accuracy with the mini you're not gonna find it. But you already know that.
The scope you bought is a great scope, I own a vortex 3-9x40 and a Sparc AR and have been more than happy with Vortex. It's arguably more than you may want or need for the mini but I'd still hang on to it.
Everything I've read about magazines for the mini leads me to believe your best bet is to stick with the actual Ruger mags. One of the downsides of owning a mini, expensive and sometimes hard to find mags.
You seem to want to go ahead and do all the typical upgrades mini guys do and that's cool but I'd suggest getting plenty of rounds through the gun before you decide on what it needs. In the end you may just be throwing money at the gun for no reason when that money could have went towards ammo and range time.
I've researched the mini a lot because part of me wants one but it's hard to justify the money to buy one when I have ARs that do everything a mini does and some would argue the AR does it a lot better (I'm one of them). However, I still find myself wanting one. Good luck man, oh yeah...Welcome to the forum!

Welcome and enjoy the mini-14. I've had mine since 1994 and it will shoot .223 or 5.56. Typically .223 is cheaper to buy and the 5.56 is slightly more powerful as a rule of thumb. Of course there are a lot of different kinds of ammo out there so that won't always be true.

Ruger magazines tend to work best. If you bought your gun new and you register it with Ruger, then Ruger will give you 20% off at the Shop Ruger website. Buy some magazines from them or Midway USA.com.

Welcome from NW Georgia. The Mini 14 is a great choice IMO. I have AR's as well as my trusty Mini, and while the AR platform is arguably more versatile and accurate and I love shooting them, I have to admit I prefer shooting the 14. Maybe because at heart I'm still a wood and steel guy. Regarding ammo, I tend to buy in bulk and so I shoot whatever I get a good deal on as long as it is decent stuff. Right now I'm shooting Federal Lake City 5.56 I picked up for about 30 cents a round.

Regarding your other questions - I would recommend asking them on here.
