I have a .357/9mm convertible and a .357 lever gun. 3 in one and 2 in the other.

.22 lr and WMR........from my naa mini to my 10/22, these make excellent all purpose calibers. .22 out of a rifle can be used to good effect on predators of all flavors, and its cheap and easy to stock up on. .22 WMR is IMO a lot of punch in a small package and a 10/22 in .22 WMR is like a mini .M1 carbine.

.223/5.56 Not the perfect round but I have many AR's and a Mini-14 and its the round I used in combat. It works and I find this round to be a good compromise.

.357/ .38 - A .357 revolver and lever gun make a good combo and offer stopping power without the big $$$$ my .44 mags cost to shoot and its a round my wife can handle.

I actually have pared down my caliber list a lot..........I used to have oddball stuff like 8mm Kropatschek, 8mm Gasser and 10.2mm Dutch revolver....................so to me just sticking with "common" calibers is fine with me.

I also can't go without my .380 and .32 ACP pistols, .32 revolvers, .45's, .44's ,etc.

I agree with .22lr and .223/5.56, but I'd throw in .45 auto because I LOVE my SR1911!

Instead of .308 I would go with 30.06 but only because it opens up a lot of WWII guns.

I keep telling myself I'm going to limit any new guns to calibers I already shoot but sometimes it doesn't work out that way. I shoot many calibers but only reload for a few.

The OP stated picking 2 calibers but since everyone is choosing cartridges...

.22lr (small game, plinking, etc)
.357 maximum (small to medium game and allows .38 special and .357 mag use)
.458 Winchester (everything else that walks the planet. Can load way down to 45-70 levels, even lower with black powder or use full loads if the game wishes to eat you)

44mag
45acp
30-06

As for the .22 being cheap I agree except that I reload and will be casting soon. My 400+ pounds of lead will go a long way and because I pretty much get my brass at zero cost the big bore stuff is cheap for me to shoot. Sheesh, you guys made this tough. I feel like I would be on a ammo diet.

Just thank God we live in a country where we are not bound to three,,, or one,,, or five,,, or 30 choices.

I agree with 22 but would substitute 45acp for 357 and would use 30--06.

.22
.44 mag
12 ga.

.22 is the most cheap and versatile round there is. I prefer a .357 for most things now but if I was limited to one handgun round it would be the .44 mag/spec. and a 12ga slightly beats out the 20 as it can be loaded down for grouse etc. easier than a 20 can be loaded up for geese.

My first rifle choice would definitely be a .270 or .30 cal of some sort, I find the .223 of very limited usefulness.
